China pushed UN forces out of North Korea and deep into the South before being pushed back to the 38th parallel.
Second Sino-Japanese War:
In some cases were able to push back the Japanese invasion. But ultimately the Chinese victory was largely helped by other Allied Forces.
Accomplished several but not all strategic goals of the war. Vietnam did not pull its soldiers from Cambodia as the original intention. High casualties on both sides but a huge amount of Vietnamese infrastructure destroyed.

If winning a war means imposing your will on the enemy, that would have to be just the Sino-Japanese War of 1931–45. And even that was mainly the result of China being in the winning coalition. (The real winner of that war was the Chinese Communist Party.)
True, they did well in the Korean War of 1950–53, but all that war accomplished was to confirm the 1945 division treaty, with a more defensible border.
They gained some border territory in 1962 against India, territory that India has never formally relinquished.
Right now, they seem to be winning a war for control of the South China Sea.

Three. Plus one disputed.
The People’s Liberation Army won their own Civil War.
They could count as winners in the Korean War, in as much as they drove back first-rate US and British divisions. And made it much less likely that the USA would try invading China.
They decisively defeated India in 1962.
Border skirmishes with the Soviet Union were indecisive, and also small.
Both sides claimed victory in the Sino-Vietnamese War of 1979. But China helped get Vietnam out of Cambodia, in the long run. Prevented an invasion of Thailand, if this were ever planned.
For Imperial China, they did suppress the Taiping and other rebels. Never won against foreign armies.
